This next installment in the Apple Series is on the opposite end of the taste spectrum from the Apple Tarte. Instead of sweet, this side dish is a savory compliment to any entrée. Its color palette also makes it seem very “Fall”.  It’s a dish that I could easily see claiming a spot on the table at Thanksgiving dinner. What is this side dish you ask? Cranberry Apple Pecan Wild Rice. I know that seems like a mouthful of a title but it really isn’t as hard to make as it might sound. Now, I will be honest with you guys and say that this dish wasn’t my personal favorite but that’s also not to say that it’s bad by any means. It just means I’ve liked other recipes in the Apple Series a little better. Trust me, you still want to try this dish.

Cranberry Apple Pecan Wild Rice

Now down to the nitty gritty—what you’ll need to make this dish:

  • 1 ½ Cup broth (any flavor works really)
  • 1 ½ Cup apple juice
  • 1 Tbsp Dijon mustard
  • 3 Tbsp butter, divided into 1 Tbsp and 2 Tbsp measurements respectively
  • 1 Cup wild rice blend
  • ½ large onion, diced
  • 1 apple, chopped
  • ½ Cup dried cranberries
  • ½ Cup chopped pecans
  • 3 garlic cloves, minced
  • 2 Tsp apple cider vinegar
  • ½ Tsp salt
  • ¼ Tsp pepper
  • ½ Tsp dried oregano
  • ½ Tsp dried thyme
  • ½ Tsp dried parsley
  • 1 bay leaf

  1. Bring the following ingredients to a boil in pan:
  • Broth
  • Apple juice
  • Dijon mustard
  • 1 Tbsp butter
  • dried thyme
  • dried oregano
  • dried parsley
  • bay leaf
  • salt
  • pepper

Once boiling, add the rice to the pan and cover, reducing heat to low. Let this simmer for 45-50 minutes or until rice is tender and most of the liquid has been absorbed. You can begin cutting the onion and apple while you wait for the rice to cook.

  1. Once the rice is done, drain it and leave it in the strainer.

  2. In the now empty pan, melt the remaining 2 Tbsp of butter over medium heat. Once butter has melted, increase the heat and add the onion and apple. Cook for 5-7 minutes or until both onion and apple pieces are tender. Then, add the minced garlic and cook for another minute or so. Remove from heat.

  3. Take the rice from the strainer and pour it back into the pan with the onion and apple. Add the vinegar, cranberries, and pecans and combine. Season with additional salt and pepper as desired.
